Alticelli is a bincoe wine produced by Cantele with Fiano grapes grown in the territory of Guagnano (Lecce) and harvested in mid-September. After crushing and destemming, the must is left in contact with the skins for a maceration period of about 24 hours at a temperature between 5 and 8 ° C in order to extract at best the primary aromas that characterize the typicality of this vine is, at the same time, limiting the extraction of tannins. After drawing off, the must is fermented at 14 °C in stainless steel tanks until the end of the alcoholic fermentation.
Characterized by a green reflections on the straw background, they warn of the strength and freshness of this wine. Fruity and exotic fragrance is interspersed with delicate floral, up to fresh herbaceous. On the palate this wine proposes the fruit and the flower in the mouth; the marked acidity prolongs the taste sensations, giving it a remarkable persistence.
