FIOCCO Fiano Salento IGP is an excellent white wine produced by Azienda Agricola Fabiana of San Giorgio Jonico (Taranto_Puglia/Italy). Produced from Fiano grapes grown in the Faggiano area near the Ionian sea. The vineyards are located at about 100 m above sea level, with very high average temperatures and particularly low rainfall. The soils are medium-clayey.
The vineyard planted with the espalier system is composed of an average density of about 4600 vines per hectare with an average age of the vines around 10 years. The vineyard offers an average yield of about 110 quintals per hectare. The grapes are harvested in the last decade of August. After harvesting by hand, the selection of the best grapes and the destemming followed by a cold pre-maceration for 24 h and then the subsequent fermentation in steel at a controlled temperature of 12-14 ° C
FIOCCO Fiano is a wine produced with straw-coloured Fiano grapes with golden reflections, it has an intense, floral and fresh aroma. On the palate, it is gratifying and balanced, with the right balance between freshness and softness.
Excellent with seafood appetizers, fish soups and soft cheeses.
