PRIMITIVO Salento IGP is a red wine of Cantele Winery in Guagnano (Lecce_Puglia/Italy). It is produced from Primitivo grapes cultivated with espalier cordon and sapling, in the territories of Sava (Taranto), Torricella (Taranto), San Pietro Vernotico (Brindisi). The harvest takes place in the first days of September. After crushing and destemming, the must remains in maceration with the skins for 6-7 days. The fermentation temperature is kept within 25-26 ° C. At the end of fermentation the wine stays in barriques for about 6 months.
PRIMITIVO is characterized by a ruby red color with a delicate garnet nail. It presents mineral scents that create a delicate intersection with marasca, black cherry and plum; the flowers and spices end in a finish with an excellent olfactory insistence. On the palate, the non-aggressive tannins, the good acidity, in parallel with the softness and the typical alcohol content, support the goodness of the primitive. To be served at a temperature of 18 ° C.
