Salice Salentino Rosso DOP Riserva Leone De Castris is a red wine produced with Negroamaro and Malvasia nera di Lecce grapes from vines grown in the Apulian bush in the territories of Salice Salentino, Veglie, Guagnano, Campi Salentina and San Donaci (Lecce). Harvesting is done manually at the end of September. The destemming-crushing of the grapes is followed by fermentation with maceration at a controlled temperature (22 – 24 ° C) for a period of 15 – 20 days. Characterized by an intense red color with garnet reflections. Presents a scent of fruity notes of blackberry and black cherry, notes of basil and sweet spices due to the aging in cask.
