Sassi del Salento is a wine produced from primitive grapes normally harvested in the first days of September with manual grape picking, cultivated with the spurred cordon system in the countryside of Guagnano. De-stemming, fermentation maceration in contact with the skins for 8-10 days, draining in a soft press and control of the must temperature at 25 ° C. The wine then follows the malolactic fermentation followed by bottling.
This primitive wine is a wine with an intense ruby red color with a strong note of red fruit on the nose and a characteristic body and structure typical of the vine. A remarkably balanced and pleasant to drink wine, suitable to accompany grilled red and white meats, important first courses and hard and semi-hard cheeses. It is advisable to taste it at a serving temperature of 18 ° C, taking care to uncork it at least 30 minutes before serving.
