Sire Negroamaro rosso is a wine produced by the Mocavero Winery based on grapes from vineyards located in the municipalities of the province of Lecce. The soils are of the clayey-calcareous type and the vineyards are bred with the traditional Salento methodology of Alberello Pugliese.
The grapes are harvested by hand in the second decade of September, followed by a classic vinification in red, with prolonged contact time between the marc and the must to allow a greater extraction of coloring substances. The pomace is separated from the liquid part (wine must). Fermentation is completed in stainless steel tanks. Once fermentation is complete, the wine is separated from the lees and stored in steel tanks for about a year. Finally it is stabilized, filtered and bottled. Intense red color with violet reflections, balanced tannins and intense scent of wild berries.
