History and Winemaking
A Passo Lento is produced by Cantina Vecchia Torre in Leverano, in the heart of Salento. It is a blend that combines the area’s symbolic grape, Negroamaro, with a small addition of the international Syrah variety. The distinguishing characteristic is the **partial drying (late-ripening) on the vine**: the bunches are left to over-ripen for about ten days after the normal harvest period before being picked. This gives the wine an enveloping and harmonious taste.
