Acante is rodotto with Fiano grapes grown in Guyot vines on deep and dry clay soils with the presence of tuffaceous limestone in the Salento area. The grapes are harvested around the second decade of September, during the coolest hours of the night. To a light maceration on the skins, to ensure a perfect and complete extraction of the aromatic fraction of the wine, follows, for a fortnight, the fermentation in steel at low temperatures (8-12 °C). The wine then remains to refine on its own yeasts thus enriching the mineral notes and flavor.
Characterized by a pale straw yellow color. It has a wide fragrance of fruit (pear, pineapple) and honey. On the palate it releases a fresh and lively, balanced flavor, with notes of fresh fruit and a pleasant toasted hazelnut finish. To be served at a temperature of 10-12 ° C.
