Acante Fiano Castello Monaci is a still white wine from the Salento company Castello Monaci. The name “ACANTE” derives from the Salento dialect and means “Empty” and indicates the ease of drinking and the easy combination with numerous dishes.

Although Fiano is a vine famous for its cultivation in the Campania area with the DOCG Fiano di Avellino, it can absolutely also be considered a native Apulian vine.

ACANTE was born in 2012 and is produced with Fiano grapes in Guyot-cultivated vines on deep and dry clayey soils with the presence of tuffaceous limestone, in the Salento area. The grapes are harvested around the second decade of September, in the coolest hours of the night. It undergoes a light maceration on the skins, to guarantee a perfect and complete extraction of the aromatic fraction of the wine. Fermentation in steel at low temperatures (8-12 ° C) follows for about 15 days. The wine then remains to refine on its own yeasts thus enriching the mineral notes and flavor.

This wine is characterized by a pale straw yellow color. It has a broad scent of fruit – pear, pineapple – and honey. On the palate, it releases a fresh and lively flavor, balanced, with notes of fresh fruit and a pleasant finish of toasted hazelnut. To be served at a temperature of 10-12 ° C.
