ACINE Verdeca by Francesco Taurino is a IGP Salento white wine. Produced with 100% Verdeca grapes grown in the countryside of Guagnano (Lecce, Puglia_Italy) on calcareous and clayey soils of medium texture. This type of soil is ideal for the production of the typical white grape variety from Salento.
The espalier-grown grapes have a density of 4800 plants per hectare. The harvest is done manually in the first ten days of September. The grapes are harvested in crates and taken to the cellar for white vinification with destemming. Subsequently, a soft pressing followed by fermentation at a temperature of 10 ° C for a period of 6-8 hours maximum. Once the fermentation is finished, it is left to rest in stainless steel tanks and then bottled.
ACINE shows a straw yellow color with greenish reflections. The nose is medium fruity with a hint of green apple and a tropical fruit finish. In the mouth, it is balanced and has a pleasant freshness and acidity that make it pleasantly drinkable.
This verdeca is ideal for opening a meal or for an aperitif. It goes very well with first and second courses based on fish and shellfish. Also ideal with delicate vegetable and vegetable-based soups. Perfectly combines with fresh cheese platters.
