Alticelli Fiano Salento IGP is a white wine produced by Cantina Cantele. Fiano grapes are grown in the territory of Guagnano (Puglia, Lecce_Italy) and harvested in mid-September. After pressing and destemming, the must is left in contact with the skins for a period of maceration of about 24 hours at a temperature between 5 and 8 ° C in order to best extract the primary aromas that characterize the typicality of this vine and, at the same time, limiting the extraction of tannins. Finally, after racking, the must is fermented at 14 ° C in stainless steel tanks until the end of the alcoholic fermentation.
Characterized by green reflections on the straw-yellow background, they forewarn the backbone of the freshness and tenacity of this wine. Fruity scent of drupes and the exotic is interspersed with delicate floral, up to the fresh herbaceous. On the palate this wine proposes fruit and flower in the mouth; the marked acidity prolongs the gustatory sensations, giving it a remarkable persistence. This white wine from Salento has an aging potential of 1-3 years.
It is a very versatile white wine. It goes perfectly with seafood dishes and fresh or lightly seasoned cheese platters. In addition, it also goes very well with traditional Salento vegetable dishes.
