AMALUNA Sparkling blanc de noirs brut extra dry made from Negroamaro grapes vinified in white and made sparkling with the Charmat method from Due Palme winery.
The vinification begins with the Negroamaro grapes harvested at the end of August in order to preserve the freshness and acidity. Upon arrival at the winery, the grapes are softly de-stemmed. The flower must obtained by pressing undergoes a static clarification and subsequently the yeasts are inoculated. Alcoholic fermentation takes place in steel tanks at a controlled temperature of 13 ° C for 40 days. The sparkling wine is subjected to refrigeration of -4 ° C to allow the precipitation of excess salts of tartrates. After 2/3 days, isobaric bottling is carried out.
AMALUNA Sparkling has a brilliant straw yellow color, with a white and creamy froth, with a fine and delicate perlage. On the nose, floral aromas prevail, with characteristic fruity notes, in particular, white peach, banana and pineapple, kiwi and cedar peel. In the mouth, it is soft, savory, full and balanced, but at the same time dry, thanks to its pleasant acidity and its mineral notes.
