AMALUNA sparkling wine by Cantina due Palme is the first sparkling wine produced in Salento. The name “Amaluna” refers precisely to the moon as a female element and a generating principle of birth and rebirth in the cycles of agriculture. It is obtained from 100% Negroamaro grapes vinified in white and sparkling with the Charmat method.
The vinification begins with the Negroamaro grapes harvested at the end of August in order to preserve the freshness and acidity. Upon arrival in the cellar, the grapes are softly de-stemmed. The must obtain from the pressing undergoes a static clarification and, subsequently, the yeasts are inoculated. Alcoholic fermentation takes place in steel tanks at a controlled temperature of 13 ° C for 40 days. Sparkling wine is refrigerated at -4 ° C to allow the precipitation of excess tartrate salts. After 2/3 days we proceed with isobaric bottling.
It has a bright straw yellow color, with a white and creamy froth, with a fine and delicate perlage. Floral aromas prevail on the nose, with characteristic fruity notes, in particular white peach, banana and pineapple, kiwi, and cedar peel. In the mouth, it is soft, savory, full, and balanced, but at the same time dry, thanks to its pleasant acidity and its mineral notes. A product that promises to satisfy the palates of all ages, even the youngest.
