Amativo is a wine produced with Primitivo and Negroamaro grapes grown in the territory of Guagnano (Lecce), Sava (Taranto), San Pietro Vernotico (Brindisi). The growht system is the Pugliese Sapling system, the Primitivo grapes are harvested the first days of September, while those of Negroamaro at the end of September. After destemming and crushing, the must remains in maceration with the skins for 12-15 days, during which a delestage is carried out daily. The fermentation temperature is maintained within 26-28 ° C. At the end of the malolactic fermentation the wine is placed in barriques where it stays for about 12 months.
Characterized by a ruby red color. It has a scent of rose and violet that is released in a slow and lasting progression, giving way to wild berries, dried figs, jams and vanilla. On the palate the olfactory harmony recurs, releasing delicate fruity and spicy progressions. The copious and balanced taste in its components makes this wine “indelible”. The extreme softness closes with a vast and remarkably long-lasting retro-olfactory impact. To be served at a temperature of 18 ° C.
