AMATIVO Salento IGP  is a red wine produced with Negroamaro and Primitivo del Salento grapes by the renowned Cantele Salento winery. The vineyards of origin of these grapes are located in the territory of Guagnano (Lecce), Sava (Taranto), San Pietro Vernotico (Brindisi). The bland is obtained with 40% Negroamaro grapes and 60% Primitivo grapes, the two native and representative grape varieties of Salento. For these vineyards, the sapling cultivation system is used. Primitivo grapes are harvested in the first days of September, while those of Negroamaro is harvested at the end of September. After destemming and crushing, the must remains in maceration with the skins for 12-15 days during which emptying is carried out daily. The fermentation temperature is kept within 26-28 ° C. At the end of the malolactic fermentation, the wine is transferred to barriques where it rests for about 12 months.

This wine is characterized by a ruby red color. The nose has aromas of rose and violet that are released in a slow and lasting progression, giving way to berries, dried figs, jams, and vanilla. On the palate, the olfactory harmony is proposed again, releasing delicate fruity and spicy progressions. The copious and balanced taste in its components makes this wine “indelible”. The extreme softness closes with a vast and remarkably long-lasting retro-olfactory impact. To be served at a temperature of 18 ° C.
