Anima di Negroamaro Lizzano DOP superiore by Claudio Quarta Vignaiolo is a red wine produced from 100% Negroamaro grapes which come only from the Lizzano area in the north-western part of Salento. The name of “negroamaro” come to the repetition of the word “black” in Latin “niger” and in ancient Greek “mavros” from which the dialectal “maru”. The grapes are obtained from vines grown with the spurred cordon system on medium-textured soils tending to loose with a good presence of skeleton.

The grapes are harvested in the third decade of September, by mechanized grape harvester, between night and the first light of dawn so that the low temperature prevents spontaneous start of fermentation. The final yield is around 80 quintals /ha.

Vinification takes place in steel at controlled temperature (21-23 °C). Maceration of the skins on the must for 15 days with frequent pumping over. Alcoholic fermentation induced with selected yeasts, spontaneous malolactic fermentation.

Anima di Negroamaro has an intense ruby ​​color with aromas of black currant, blackberries, spices and balsamic herbs. On the palate it is complex and harmonious. This is a counter-current Negroamaro because on the palate it is very fine and delicate and mineral, even if the characteristic length remains in the finish.

Pairings: red meats, aged cheeses. Returning to an ancient tradition, this wine, when served fresh, goes well with fish dishes.
