Anima di Primitivo Primitivo di Manduria DOP by Claudio Quarta Vignaiolo is a red wine produced from 100% primitivo grapes, a vine originating in Croatia and also widespread in California under the name of Zinfandel, and which owes its name to the early biological cycle. The plants are bred with saplings or spurred cordons on medium-textured soils tending to loose, with a good presence of skeleton.

The grapes are harvested in the first ten days of September, by mechanized harvester, between night and the first light of dawn so that the low temperature prevents a spontaneous start of fermentation. The final yield is around 80 quintals/ha.

Vinification takes place in steel containers at controlled temperature (21-23 ° C). The maceration of the skins on the must is carried out for 15 days with frequent pumping over. Alcoholic fermentation induced with selected yeasts, spontaneous malolactic fermentation.

Anima di Primitivo has an impenetrable garnet red color. Scent of ripe red fruit, with evident hints of cherry and plum in alcohol. Jam flavor, rich and long, with well-balanced tannins.

Pairings: grilled red meats, mixed boiled meats and cold cuts.
