The wines of the Antica Masseria del Sigillo take their name from the 1950s cellar that Claudio Quarta bought in Guagnano, and from which the Apulian productive and entrepreneurial adventure started. From that magical place, later the production of the Antica Masseria del Sigillo line was transferred to the new Tenute Eméra winery, immersed in the vineyards close to the Ionian coast.
The Antico Sigillo Primitivo di Manduria DOP wine by Claudio Quarta Vignaiolo is produced from primitive grapes obtained from spurred cordon vineyards on medium-textured soils with the presence of silica, clay and sand and abundant skeleton (stones, pebbles and gravel) all inside the Tenute Eméra farm, between the marinas of Lizzano and Pulsano. The yield per hectare is 90 quintals
The grapes are harvested in the first ten days of September and after careful selection the grapes are de-stemmed and crushed, then left to macerate and ferment in cement tanks for about 15 days. The extraction of the color and of the polyphenolic and aromatic components is favored by daily pumping over of the liquid fraction on the marc cap. The wine finishes its aging with a passage in barrique for 12 months followed by bottle aging.
Sigillo Primo presents itself in the glass with a beautiful deep red color that is enriched with garnet reflections over time. Intense hints of ripe fruit, including blackberry, mulberry and cherries, emerge in this wine, along with spicy notes. Velvety tannins are manifested in the soft and juicy finish.
Pairings: rich first courses of the Italian tradition, red meats and aged cheeses.
