Antieri susumaniello rosè is the new rosé wine obtained by the Schola Sarmenti winery in 2020 starting from the traditional Salento susumaniello grapes. An innovative and elegant wine, which however remains faithful to the classic tradition of Salento rosé wines, however rich in body and structure.

The grapes come from the countryside of Nardò, where the climate is typical Mediterranean, hot and arid in summer with little rainfall. The soil is located at 30 meters above sea level, with a slight degradation towards the sea and is of the Pleistocene-type silico-clay-limestone type, compact and arid, with excellent fertility with a training system. hectare: about 6,000 Kg. of grapes Average age of the vines: 10 years.

The grapes are harvested in the second week of September with a manual harvest in small wooden boxes to preserve their integrity. The vinification is carried out with a quick cryomaceration of the skins followed by the fermentation in steel at a controlled temperature. Finally the wine ages in the bottle for about 4 months.

Antieri rosato has a bright and shiny pale pink color, the nose releases a delicate hint of small red fruits and wildflowers, and in the mouth it is savory, acid, however consistent and very persistent.

Pairings: aperitifs and dishes based on fresh fish from the Salento tradition, but also crudités, sushi and fish sashimi from the Mediterranean.
