Bianco di Negroamaro is a wine born from a project by Claudio Quarta Vignaiolo developed in the Tenute Eméra winery, where to enhance and tell the story of Negroamaro, the main grape of these territories since ancient times, is one of our most pleasant duties. With this project, we wanted to maximize the expression of a single grape variety, giving maximum quality and dignity. Furthermore, by vinifying this indigenous grape among the most important in southern Italy in white, we wanted to demonstrate the versatility of a grape that manages to express itself best not only in Rosé and Red but also in White.
Bianco di Negroamaro is a particular wine produced in this year in only 3300 bottles starting from grapes harvested in September 2019 from plants grown in one and only vineyard. The vineyard is grown on medium-textured soil, the presence of skeleton, silica and sand. This new label was produced starting from a manual harvesting of the grapes carried out in the cooler hours of the morning, using dry ice at each stage to avoid oxidation, and we accompanied them, literally gently supported, with extreme care, in every step . To produce this wine we tried to keep all the berries intact until the soft horizontal pressing, carried out at 0.1 bar with the dripping open and without previously destemming.
Brilliant, with an attractive pink gold nuance, it is an exceptionally complex wine, with rich notes of acacia and jasmine. It reveals a new, dense, roundness, accompanied by a spring freshness that recalls the hints of chamomile and mimosa and cheers the taste buds after the sip, balancing the richness and power and leaving a feeling of full freshness.
