Bisbaia is a wine produced by Tenute Invidia obtained from negroamaro grapes grown with the espalier and Apulian sapling technique in the family lands in the countryside of San Pietro Vernotico. This wine takes its name from the great Messapian festival celebrated on the occasion of the pruning of the vines.

The harvest is done manually in the third week of September. Once the destemming has been carried out, there is a maceration at controlled temperature of about 10 days in which the fermentation phase is simultaneously carried out. Once the alcoholic fermentation is completed, the spontaneous malolactic fermentation is also carried out and then the wine rests in steel and for a few months in oak barriques.

Bisbaia presents itself in the glass with an intense ruby ​​red color, while the nose begins with hints of ripe red berry fruit such as strawberry, cherry and blueberry. In the mouth it is pleasantly soft, warm, spicy with a good persistence given by young but well-shaped tannins.

Pairing: It goes well with red meats, spicy dishes and aged cheeses.
