The Brut Metodo Classico is the most famous and well-known product of the D’Araprì winery, and it was also the first to be produced. It is produced from a blend of two prestigious blends, Bombino bianco and one international, Pinot nero grown in the Contrada San Biase area on clayey-calcareous soil, slightly sloping with a South South-West exposure, and 80-100 meters. above sea level. and is grown with the classic technique of the Capitanata territories, the Apulian pergola with a density of 2000 plants per hectare.

The final yield is about 100-120 quintals per hectare, about 3-4 kg per vine while the harvest time is at the end of August for the pinot noir and the second decade of September bombino bianco, with manual harvesting and selection of the grapes. The Brut D’Araprì is worked by hand in the cellar with a refermentation in the bottle that takes place thanks to the expeditionè liquer.

Each bottle remains in contact with the yeasts for a minimum of 24 months away from light and drafts and shocks, at a temperature of 13 ° C, in the basement of our ancient cellar. Degorgement: a la glace manually, with the addition of the dosage syrup, about two months before marketing.

The brut sparkling wine of D’araprì has now become a symbol of the excellence of Apulian enology, demonstrating against all prejudices that it is possible with competence and passion to obtain excellent classic method bubbles even in southern Italy.

In the glass it shows a brilliant straw color and a subtle and persistent perlage. The nose feels an ethereal bouquet with hints of lysate (bread crust), followed by fruity tones of apple, peach and orange. In the mouth it is delicately dry and harmonious, with a fresh and full-bodied mouth and aftertaste of toasted notes and panettone.

Pairings: Excellent as an aperitif. It is a classy sparkling wine to celebrate any important occasion such as receptions, dinner parties, banquets; ideal to drink in moments of relaxation.
