Brut Pas Dosé made from D’araprì winery is the driest product in the range of sparkling wines marketed. It does not see the addition of expedition liquer, so the base wine expresses itself in all its personality. Pas Dosé is aimed at people who use sparkling wine throughout the meal and lovers of classic sparkling wine.
It is produced from a blend of two prestigious blends, Bombino bianco and one international, Pinot nero grown in the Contrada San Biase area on clayey-calcareous soil, slightly sloping with a South South-West exposure, and 80-100 meters. above sea level. and is grown with the classic technique of the Capitanata territories, the Apulian pergola with a density of 2000 plants per hectare.
The final yield is about 100-120 quintals per hectare, about 3-4 kg per vine while the harvest time is at the end of August for the pinot noir and the second decade of September bombino bianco, with manual harvesting and selection of the grapes. Each bottle rests for at least 30 months away from light and drafts and shocks, at a temperature of 13°C, in the basement of our ancient cellar. Disgorgement takes place a la glace manually, without adding the dosage syrup, about two months before marketing.
In the glass it shows a deep straw color with golden reflections and a fine perlage. The nose feels an elegant bouquet, rich with toasted notes of bread and hints of pastry. In the mouth it is dry, harmonious with a very elegant, fresh mouth and with a voluminous and subtle creaminess.
Pairings: Excellent and refined for “all meals”. It reveals its class especially with appetizers, fish and shellfish of all kinds, white meats (rabbit, veal, turkey), soft cheeses.
