Buccianera Salento IGP is the only example of a blend made with three characteristic vines of the Brindisi area. The old vines from which the grapes are harvested are cultivated with the traditional Apulian sapling technique and grow on medium-textured soils at an altitude of about 20 meters. above sea level located in the province of Brindisi.

The harvest carried out manually is delayed as much as possible and begins with the malvasia followed by the susumaniello and finally the negroamaro grapes are harvested. The vinification takes place after a careful selection of the grapes from old negroamaro, black malvasia di Brindisi and susumaniello plants, followed by the pressing-destemming fermentation for 15/20 days at controlled temperature in truncated conical steel tanks. This is followed by a rest and aging of 4 months in truncated conical French oak vats (Allier) of 50 Hl.

Buccianera weighs in the glass with a ruby ​​red color with violet reflections. The nose is first intense, floral, and then markedly full of spicy hints. In the mouth it expresses itself with a good freshness and a tannicity typical of negroamaro and susumaniello which is completed with a light sapidity. Balanced and quite intense. Persistent and fine. Full-bodied and quite harmonious.

Pairings: Excellent with red meats. Ideal partner for medium and high seasoning cheeses.
