CALIDUS Primitivo di Manduria DOP is a red wine produced by the Fabiana winery in San Giorgio Ionico (Taranto_Puglia/Italy). CALIDUS is born with a simple but fundamental philosophy, that of quality at the centre of the product. The search for the best grapes, the knowledge of the ancient art of winemaking (which has lasted 3,000 years here in Manduria) and the love for their land, give life to CALIDUS which is not only wine but above all an emotion.

CALIDUS is an amazing wine produced from Primitivo grapes grown in the Faggiano area near the Ionian sea. The cultivated vineyards are located at about 100 m above sea level, with very high average temperatures and particularly low rainfall and the soils are medium-clayey.

Vineyard, planted in part with the Apulian sapling system, is composed of an average density of about 4,000 vines per hectare with an average age of the vines of 45 years. The vineyard offers an average yield of about 90 quintals per hectare. The grapes are harvested in the last 10 days of September. After the late withering on the plant and after harvesting by hand, the selection of the best bunches, and the destemming process is carried out with a Thermo controlled maceration. Following, drawing off and soft pressing at the end of fermentation. Finally, the wine is aged for 4 months in French toasted oak barrels.

CALIDUS Primitivo di Manduria DOP has a ruby ​​red colour with garnet nuances. The aroma is intense and complex, of ripe red-fleshed fruits (cherry, raspberry, blackberry) in a balanced fusion with hints of toasted wood and bitter cocoa. The dry, warm, soft, tannic and persistent tastefully recalls the olfactory sensations.

Pairing

Excellent with grilled meats, hard cheeses. Ideal with chestnuts.
