CANONICO Negroamaro Salento IGP is a red wine produced by Cantine due Palme of Cellino San Marco (Brindisi_Puglia/Italy).

Produced with Negroamaro grapes, espalier-grown in the Brindisi area. The harvest takes place from ripe grapes, gently de-stemmed, using new, very delicate processing techniques. During the maceration phase (about 8 days) in hermetically sealed vertical fermenters and saturated with Co2, the wine also completes the alcoholic fermentation at a temperature not exceeding 20 ° C. The wine is then introduced in barriques, where it completes the malolactic fermentation, to then be subjected to an ageing of further 4 months in wood and a subsequent ageing in bottle.

CANONICO Negroamaro is characterized by an intense ruby ​​red color with purple reflections. It has a fine, fruity and fragrant scent. Of medium structure, it is particularly balanced on the palate with good freshness and adequate pseudo-caloric sensations. To be served at a temperature of 12.5 ° C.
