Castel di Serranova wine is certainly one of the most important wines produced by the Agricola Vallone.

It is produced from Negroamaro and Susumaniello grapes grown on the private estate of the company near Brindisi.

The vines cultivated with the bilateral spurred cordon cultivation system insist on calcareous – clayey soil with a north – south exposure and with a planting density of about 4000 vines per hectare with a yield of about 50/60 quintals. per hectare.

The vinification begins with the harvest which takes place in the period of late September. The grapes are subjected to soft destemming-crushing, which is followed by temperature-controlled fermentation in temperature-controlled steel tanks for 15-20 days. Spontaneous malolactic fermentation at the end of alcoholic fermentation.

A part of the wine completes its aging in Allier oak tonneaux for 12 months, while another part in cement tanks, subsequently, after the blend, in concrete tanks until bottling.

Castel di  Serranova has an intense ruby ​​color, intense purple reflections. The nose has a complex, intense and persistent aroma, characterized by hints of ripe cherry, blackberry, black currant, spices and balsamic notes. In the mouth it is harmonious, voluminous, consistent, with a body of strong structure and a thick and silky tannic texture.

Pairings: It goes well with beef, baked or grilled lamb, game, braised meats, seasoned cheeses.
