Produced with Chardonnay grapes in vineyards cultivated in the Tenute Maìme in S. Pietro Vernotico (80%) and Bocca di Lupo in Minervino Murge (20%). The Chardonnay grapes harvested at technological maturity are immediately placed in the cellar. After soft pressing, the must is cooled and kept at a temperature of 10 ° C, for about 24 h, in order to obtain a natural decantation. Subsequently, the so clarified must is fermented with selected yeasts in temperature-controlled stainless steel tanks at a temperature of 16 ° C, in order to enhance the aromatic heritage of the grapes. The subsequent aging of the wine continues in steel until the bottling stage.
Characterized by a light yellow color with greenish reflections. It has a fruity aroma, with sensations of apple and citrus peel, and delicately floral, with notes of hawthorn, acacia. The palate releases a fresh, savory and well-balanced flavor with slightly balsamic returns. To be served at a temperature of 10-12 ° C.
