Chiodi di Garofano red wine Primitivo di Manduria DOP produced by the Antico Palmento winery in the area of ​​Manduria (Taranto).

This wine is produced using exclusively grapes from cultivated fields with a planting density of about 4500 plants per hectare cultivated with the classic Apulian sapling training system and with an average plant age of about 40 years. The average yield per hectare is about 40 quintals of grapes while the yield in wine is about 60 liters per quintal of grapes. The wine is produced starting from the manual harvest in boxes of the grapes which normally begins in the first decade of September.

Once harvested and de-stemmed, the grapes undergo a maceration for 7-8 days of the skins in traditional “fermenters” of vitrified cement with the start of fermentation using indigenous yeasts; subsequent inoculation of selected yeasts. Racking, completion of alcoholic fermentation and aging in underground cement vats; following the traditional production process typical of “palmenti”. Evolution for 4 months in the bottle before being released for consumption.

Chiodi di Garofano is a wine with an intense ruby ​​red color with violet reflections. The scent is fruity, broad and complex. There are hints of berries, plum and dried figs softened by delicate hints of sweet spices and marzipan. On the palate it conquers with a good tannin supported by an important alcohol concentration. Robust wine, of good complexity, expresses the most authentic characteristics of the vine.

Its grandeur suggests pairings with structured first courses, roasts, braised meats and medium-aged cheeses.
