The Cupertino DOC Rosso Riserva wine from the Cupertinum cellar is an extraordinary wine produced from Negroamaro grapes, with minimal additions of Malvasia nera and Montepulciano. It is the wine of the great Salentine tradition, a wine that is aged for 8/9 years in direct contact with the vitrified cement tanks placed in the basement of the winery. The grapes come from very old Apulian sapling plants with a density of about 4000 plants per hectare with a yield of 90 quintals. per hectare. These plants, with an average age of about 40 years, are cultivated in clay soils above a tuff structure at an altitude of about 5 meters above sea level around the town of Copertino in the province of Lecce in the center of Salento. The wine is produced starting from a manual harvest of the grapes carried out from the third week of September, which are then de-stemmed and pressed. Following the maceration with the skins for 7/8 days at a temperature of 28 °; followed by smoothing and pressing and refining in steel and then for 8 years in underground vitrified cement tank.
The Copertino DOC Rosso Riserva is a deep ruby red wine with garnet reflections, with an intense, ample, rich and ethereal aroma with hints of blackberry, plum, Mediterranean scrub, ripe fruits and leather, it has a warm, rich, generous flavor with evolved tones and complex, with flavors of almond and black currant.
