Cubardi Primitivo IGT Salento by Schola Sarmenti is produced with grapes from Primitivo grape saplings over 60 years old, steeped in ancient stories and whole lives. Cubardi, is a wine that is a sincere, precious and meticulous expression of the Primitivo del Salento.

The grapes harvested all produced by own vineyards located in the territory of Nardò, are harvested by hand and gently placed in small ventilated boxes to preserve their integrity. In the cellar they are then further selected on a modern sorting table. Following a fermentation in steel at a controlled temperature and finally, the ageing is completed for 6 months in French oak tonneaux, on the second pass; then, 8 months of further ageing in the bottle.

This wonderful wine can express intense notes of ripe fruit open the door to pleasant hints of tobacco, in a soft finish of chocolate and coffee. The taste of Cubardi is velvety and enveloping, with tannins capable of delicately expanding, leaving a pleasant length of taste. From the thick yet light fabric, it lingers on the palate with stubbornness, letting its strong personality presage.

We recommend combining Cubardi with traditional Apulian first courses. An ideal combination of this wine also with appetizers of cold cuts and cheeses, second courses based on red meat, game, braised and stewed or grilled meat.
