D’ARCANGELO Malvasia Nera di Lecce Salento IGP is a red wine produced by Palamà winery in Cutrofiano (Lecce_Puglia/Italy). Produced from only grapes of Black Malvasia of Lecce cultivated in the countryside of Cutrofiano in the province of Lecce. This is a wine that goes back to the family tradition, a product linked to the territory but made using modern techniques. The harvest starts around the end of August with manual harvesting in wooden boxes. The vinification, which follows the destemming, takes place in stainless steel silos at a controlled temperature and with maceration of at least 8-10 days. Following the fermentation process, the wine is aged in 4-pass barrels, to avoid loading the wine with tannins that must remain, due to its peculiar characteristic, very soft and extremely balanced.
D’ARCANGELO has a rather dark ruby red colour, clear, with slightly garnet reflections and rich of consistent and dense arches. On the nose, the wine is intense, fine, ample and of good complexity, with secondary and tertiary evolutionary scents. This wine has fruity scents of plum and black cherry, ethereal notes and hints of rosemary, myrtle, cocoa powder and cassis in jam. There are also spicy, smoky and woody notes given by the wise use of small barrels. On the gustatory test, it is a dry wine, pleasantly fresh, soft, warm, tannic with dense and sweet tannins and at the same time velvety and ample, of good persistence and complexity.
D’ARCANGELO is a wine dedicated to the forefather of the Palamà Winery, Arcangelo Palamà. It is a wine that was obtained “Jealously making the 100% Malvasia Nera. Thus he created the nectar destined for him and his loved ones, whom he met both in the cold winter evenings and in the hot summer nights, watering with his generous perfume every dish reached the table”.
Savoury first courses and second courses of roast meat. It goes well with seasoned or blue cheeses with cow’s milk or with important game dishes and sauces.
