Don Pepè is an extraordinary wine produced by the Petrelli winery starting from grapes grown in the land owned by the company in the countryside of Carmiano and rests for 18 months in oak barrels. Wine obtained from a selection of the best grapes produced on the farm, and is one of the most beautiful red expressions of the Salento area. A wine that contains all the passion and flavors that the ancient land of Salento can express. A wine of yesteryear, far from the commercial flavors that it knows how to conquer for its simple complexity.
The land from which the grapes come are located at an altitude of about 32 m asl, 25 km from the sea with a medium-textured soil, while the training system used is the spurred cordon with a density of vines equal to about 5000 / has with a final grape yield of 80 quintals. The Malvasia grapes are harvested around the third week of September while those of Negroamaro about ten days later. The vinification process is carried out with a maceration in steel for 15 days at a controlled temperature. Once the fermentation phase has been completed, the wine rests and refines again in steel for 6 months after which it is transferred and ends its cycle with 18 months in American oak barrels and finally another 6 months in the bottle.
Don Pepè has a burgundy red color, impenetrable, brilliant on the nail. The nose is of red fruit, such as ripe cherries, morello cherries, blackberries. Followed by a note of oregano and wild asparagus. On the finish great spiciness of black pepper and tobacco and nutmeg. In the mouth it is rough at first glance, and then softens with a voluptuous warmth that embraces the whole palate. Excellent consistency with the flavors that reflect the olfactory notes. Acidity as good as good is the structure that manages to tame a very important alcohol content. Long and persistent finish typical of Negroamaro with a slightly bitter note of fresh almond.
Pairings: this is an elegant and fine wine, which goes well with red meats, aged cheeses and cured meats.
