History and Winemaking
“Don Pepè” is obtained from a selection of the best grapes in the Carmiano area. The process begins with 15 days of maceration in steel. The wine ages first in steel for 6 months, then its cycle is completed with a full **18 months in American oak barriques** and a further 6 months in the bottle. This long aging imparts structure and complexity.
Organoleptic Profile
Appearance: Bordeaux red, impenetrable and bright
Nose: Intense, with aromas of ripe cherry, marasca cherry, and blackberries, followed by notes of oregano, wild asparagus, and a great spice profile of black pepper, tobacco, and nutmeg.
Palate: Initially rough, it softens with a luscious warmth on the palate. It is structured, well-balanced by good acidity, which manages the important alcohol content. Long and persistent finish with the typical slight bitter almond note of Negroamaro.
