ELOQUENZIA Copertino DOP is a red wine produced by Garofano Vigneti e Cantine (Azienda Monaci) of Copertino (Lecce_Puglia). Produced from Negroamaro grapes harvested in the area of Copertino. The grapes are harvested in the second half of September. ELOQUENZIA is produced through a medium-long maceration after crushing-destemming of the bunches for at least 5 days, with daily pumping over to favour the extraction of colouring substances. Fermentation at a controlled temperature (max 29 C °). The wine is subsequently stored in cement tanks for several years. Refinement in bottle follows.
