ES by Gianfranco Fino is a wine outside the box and over the top. A wine produced in Sava, with a limited and numbered edition that enhances the characteristics of the noble Primitivo di Manduria vine, thanks to the wise use of strong solar radiation and the characteristic red earth of Salento.
To produce this wine in the field little use is made of chemistry, preferably using cover products to combat the main ampelopathies of the vine, weed mowing, no irrigation and no fertilization. The harvest is carried out with a slight drying of the grapes on the plant, harvested by hand in plastic crates with careful selection of the bunches, transported by truck with isothermal cell.
Finally, the processing in the cellar includes a selection on a sorting table, destemming, soft pressing of the berries, maceration in 70 Hl stainless steel vats, contact with the must skins for two to three weeks, temperature control of the marc hair, 2 delestage per day. Pressing of the pomace with vertical hydraulic press with stainless steel cage. After racking immediately in 50% new and 50% second passage French oak barriques. Daily batonnage until the first racking. After about 9 months of aging in wood, the wine without the aid of clarifiers and without tartaric precipitations is bottled and after about 9 months of aging it is released for consumption.
ES has a concentrated, lively, brilliant ruby red color. On the nose they arrive immediately, bursting and opulent aromas, which immediately recall fruity notes of raisins, blueberries, currant, strawberry, black cherry, almond and carob followed by fragrances of violets, tobacco and mint. The spicy tone of nutmeg, cinnamon, cloves and black pepper is refined. In the mouth the sip is full, voluminous, warm and overflowing, then tempered by a pervasive acid boost that releases all the freshness possible. It is also sapid, mineral, harmonious, complex, structured, fleshy, imposing, solid, austere, exuberant, intriguing, balanced and complex. The tannins that are certainly not excessive in the primitive blend, here are docile and gentle, caressing the palate like a glove. The fruit is fresh, crunchy, ripe and concentrated. Long, amazing, enjoyable and persistent closure.
Pairings: Perfect wine to combine with first and second courses based on red meats. In particular, it can also be combined with a typical dish of Salento which is pork with wild chicory.
