Fanoi is a sumptuous, important, intriguing wine, produced by the Cantele winery starting from negroamaro grapes obtained from old plants grown with the ancient and traditional Apulian sapling technique which has a very low yield compared to a very high quality. The 2015 harvest which was an excellent vintage in Salento is currently the first vintage of Fanoi that has been produced and the circulation is only about 3000 bottles per year.

The harvest takes place in the first week of October, when the negroamaro grapes reach the maximum of phenolic ripeness. This gives Fanoi a remarkable body, structure, elegance and intensity. The grapes are harvested manually in wooden boxes and then further selected by hand. After destemming, the grapes are pressed and macerated for about 15 days with fermentation proceeding at a controlled temperature of about 25 ° C. After racking, the wine is aged for 12 months in French oak barriques and finally continues its aging in the bottle.

Fanoi in the glass shows an intense, vivid, brilliant ruby ​​red color. On the nose there are nuances of sumptuous fragrances that express the alma mater of the vineyards, fertile with Mediterranean vibrant intensity in the wine. Some characteristics are revealed: myrtle, thyme, marjoram, red fruit at its peak of character and a hint of salt that refers to the presence of the sea, or the holy water of the south.

In the mouth at the beginning it is delicate with acid/savory characteristics typical of Negroamaro which, accentuated by a structured albeit young tannin, continues in the evolution of the sip with a dynamic vitalism ready to set in the mouth giving a trail of slow flavor, a generous ending from the marine features that make up the unmistakable personality of the Salento terroir.

Pairings: to accompany roasted, braised, grilled meats, perfect with stews and boiled meats.
