The Fiano IGP Salento from the Mottura winery is a wine produced from grapes grown on clayey-based calcareous soils in the central part of Salento. The training system is Guyout, with a yield of 90 qt. per hectare.

The harvest is manual and is carried out when the bunches are perfectly ripe, when the acid and fresh component of the grapes is still intact. In the cellar the grapes undergo a soft pressing and the must ferments at a controlled temperature. Finally, the wine ages in steel silos for a few months and ends the production cycle in the bottle.

The wine has a straw yellow color with greenish reflections. On the nose this fiano has an intense, complex and elegant bouquet. Floral nose of jasmine, elderberry and wild rose. In the mouth the wine has a fresh, rich and harmonious entry, with an averagely long and savory finish.

Pairings: It goes perfectly with seafood appetizers, pasta and risotto and also with seafood sauces and fresh cheeses.
