History and Winemaking
Fiano grapes are manually harvested into small, ventilated crates to preserve their integrity and undergo further selection on a sorting table in the cellar. Vinification is carried out “in bianco” (without skins) at a controlled temperature. Aging takes place in **stainless steel tanks**, a method intended to maintain the primary aromas and freshness of the grape variety, giving it its typical mineral note.
