Giancòla is a white wine that is produced from Malvasia Bianca grapes grown on sandy soils on the estate of Jaddico-Giancòla, near Brindisi. The vines planted in 1996, with a yield of 3,800 plants per hectare are cultivated with the spurred cordon training system and the final yield is 60 quintals of grapes per hectare with a final production of 20,000 bottles.
The harvest begins in the first ten days of September and is carried out completely by hand. Vinification involves fermentation at a controlled temperature of about 16-18 ° C in steel tanks.
The white malvasia Giancòla is presented in the glass with a straw yellow color with bright golden reflections. On the nose it releases intact and fragrant aromas of broom, iris and acacia, which alternate and follow generous hints of pineapple, yellow peach, cantaloupe, vanilla, almond and marine notes. The sip is very elegant and enveloping, of a rare and unique sweetness, conquered by its roundness, structure and flavor well balanced by a fresh and satisfying acid vein.
Giancòla is a wine of high caliber, fleshy and rich, very deep and persistent, charms for its harmony and complexity and for the sharpness of the fruit, a prelude to an important attitude to evolution over time.
It prefers fish-based dishes with a good structure such as seafood risotto and fillet of grilled tuna. Excellent with raw prawns and raw seafood in general. Intriguing encounter with the sea couscous.
