GIROFLE Negroamaro Rosé IGP Salento is a rosé wine produced by Garofano Vigneti and Cantine (Azienda Monaci) of Copertino (Lecce_Puglia/Italy). Produced with Negroamaro grapes harvested in the area of Copertino on clayey soils of various compositions placed above the hard or tufaceous limestone, of average fertility in a flat area, from 30 to 60 m s.l.m. Apulian sapling cultivation system. The grapes are harvested in the first or second decade of September based on the vintage. The whole bunches are vinified in a conditioned way at a temperature of about 10 ° C before pressing. The maceration of the grape harvest without stalks lasts about 24 hours. The thermal control of the fermenting must is regulated at 15-16 ° C.
GIROFLE Rosé Negroamaro is characterized by a coral red color, brilliant, with Cerasuolo tones. The nose recalls notes of flowers, with nuances of red fruits. The palate is pleasant, clear and of good freshness. Serve at a temperature of 10-12 ° C.
Pairing: Perfect to combine with traditional Apulian fish dishes but also to try with a summer barbeque.
