IDUME is a wine produced in Salento with Negroamaro and Cabernet grapes that can boast the title of יינות כשרים Kosher for Passover thanks to the Rottenberg certification and is also a יינות מבושל Mevushal wine that is suitable to be served by non-Jews.

Kosher wine must respect the dietary rules established by the Torah, interpreted by exegesis in the Talmud and codified in the Shulkan Aruk. Kosher foods, however, are not only synonymous with meals suitable for consumption by practitioners of the Jewish religion, but also with foods considered more reliable, controlled and of better quality.

Kosher wines, in fact, are also the ideal choice for vegetarians, vegans, for those suffering from food intolerances or for those who simply want to be sure of eating a safe and healthy product. The reason is certainly due to the obligation to use only certified raw materials suitable for quality for the production of kosher wine and the great attention to hygiene and external contamination that constant checks at every stage of the production process guarantee with the final issue of the stringent Kosher certification

Idume is a Salice Salentino DOP produced from negroamaro and cabernet grapes normally harvested in the last decade of September with manual harvesting of the grapes, grown with the espalier system, spurred cordon and partly with the traditional Apulian sapling system in the countryside of Guagnano. Destemming, fermentation maceration in contact with the skins for 8-10 days, draining in a soft press and control of the must temperature at 25 ° C. Before being bottled, the wine undergoes a flash pasteurization treatment at 86 ° C and immediate lowering of the temperature to 20 ° C.

This Salice Salentino wine is an intense ruby ​​red wine with a strong note of red fruit, such as cherries and plums but also a very light hint of wild herbs. In the mouth it has a characteristic body and structure typical of the two vines. A warm, enveloping, remarkably balanced and pleasant to drink wine, suitable for grilled meats, hard and semi-hard cheeses and important first courses based on game. It is recommended to taste at a serving temperature of 18 °C, taking care to uncork it at least 30 minutes before serving.
