Pumo is a wine produced from red berried grapes typical of Salento such as negroamaro and primitivo grown in the area of San Marzano in Manduria in Salento at about 100 meters above sea level. The soils where the vineyards are located are of medium clayey mixture, shallow and with a good presence of skeleton while the cultivation method is espalier with a yield of about 4500 plants per hectare.

The grapes used to produce this wine are harvested starting from the second half of September and the vinification takes place with a thermo-controlled maceration of about 10 days followed by alcoholic fermentation with selected yeasts. Finally, the wine ages in steel for a few months before being bottled.

The Pumo shows itself in the glass with an intense ruby red color with violet reflections. On the nose it releases a complex and ample perfume with notes of red fruit. In the mouth the wine is well structured, balanced and fresh.

Pairings: Cold cuts, robust first courses, risottos, light meat dishes.
