History and Winemaking
“Il Pumo” comes from cordon-trained vineyards in the Manduria area. Grapes are harvested starting from the second half of September. Vinification includes temperature-controlled maceration for about **10 days**, followed by alcoholic fermentation with selected yeasts. The wine is aged exclusively in **stainless steel tanks** before bottling.
