IL 150 Rosso Negroamaro Salento IGP is produced from grapes harvested in mid-September from soils located 100 meters above sea level and with a limestone-clay structure. The grapes are produced from plants of about 40 years and with an espalier training system that has a planting density of about 6000 plants / hectare and with a production of about 80 quintals per hectare with a wine yield of 65% .
Once the grapes have been harvested, soft pressing is carried out to preserve the fruity taste. A first phase of cold pre-maceration to best enhance the natural characteristics of freshness of the fruit is followed by about two weeks of slow fermentation at a controlled temperature in steel tanks in which refinement is completed. After three months resting in steel, it is bottled.
IL 150 Rosso Negroamaro Salento IGP has a ruby red color with intense purple reflections. The scent is fruity with light hints of tobacco, wild strawberry and rose. In the mouth it is robust and round with strong tannins and good acidity.
Pairing: Meatballs with sauce, legume soup, orecchiette with meat sauce, grilled lamb.
