Jaddico is a red wine that was produced only in the years 2011, 2012, 2013, 2015 and is made from Negromaro and Susumaniello grapes grown on sandy soils on the estate of Jaddico-Giancòla, near Brindisi. The vines planted in 1992, with a yield of 4,000 plants per hectare, are cultivated with the spurred cordon training system and the final yield is 60 quintals of grapes per hectare with a final production of 20,000 bottles.

The harvest begins at the end of September and is carried out completely by hand. The vinification involves a maceration on the skins for about 18 days to which it does if with fermentation at a controlled temperature of about 22-24 ° C in steel tanks. Malolactic fermentation follows which is completely carried out.

Jaddico shows a beautiful intense and luminous garnet color. On the nose it has a remarkable impact and complexity, and it is clear and captivating, with fragrant and intact notes reminiscent of cherry in alcohol, plum, chocolate and black pepper, well woven with aromas of leather, tobacco and cloves . In the mouth it is juicy and vibrant, able to express itself at high levels while preserving an impeccable drinkability, harmonizing the maximum acidity, softness and tannic component.

This Brindisi DOP is a rich and deep wine, of superior character and intensity, an excellent expression of a warm and seductive Mediterranean, not without elegance and remarkable personality.

PAIRINGS:

Recommended with first and second courses based on game, black truffle and porcini mushrooms. Among the cheeses to be preferred the tasty ones, above all seasoned.
