KALEMA Primitivo Salento IGP is a red wine produced by Azienda Agricola Fabiana in San Giorgio Jonico (Taranto_Puglia/Italy). Produced from Primitivo grapes grown in the Faggiano countryside near the Ionian sea. The vineyards are located about 100 m above sea level with very high average temperatures and particularly low rainfall. The soils are medium-clayey.

The vineyard planted partly with the Apulian sapling system and partly espalier is composed of an average density of about 5000 vines per hectare with an average age of the vines of 20 years. The vineyard offers an average yield of about 120 quintals per hectare. The harvest takes place in the third decade of September. The harvesting by hand is followed by the selection of the best grapes and the destemming process. The grapes begin maceration and fermentation at a controlled temperature of about 20 ° C for several days. Malolactic fermentation and refining in steel for about 6 months following.

KALEMA Primitivo is a ruby ​​red wine with violet reflections and an intense, fruity aroma with notes of plum and cherries; it is long, soft, harmonious and complex on the palate.
