KIALU ‘Aleatico Salento PGI is a wine from Cantine Petrelli produced from 100% aleatico grapes grown with spurred cordon in the Carmiano countryside.

The harvest begins with the manual harvesting and selection of the grapes in wooden boxes in the second half of September, after a slight withering on the vine. Fermentation takes place, with maceration in contact with the skins, in steel at a controlled temperature. Subsequently the wine matures in the bottle, before being put on the market.

Kialu 2019 Aleatico 100% by Cantina Petrelli has a bright and transparent amaranth red color. On the nose there are persistent, sumptuous and pervasive aromas of ripe figs, raisins, cloves and candied orange. In the mouth it is very hot with its 16 degrees, and you can appreciate hints of fruit, black cherry, cherries in alcohol, cinnamon and amaretto. The sweetness in this wine with its 10 mg of residual sugar, arrives very lightly on the tongue, vanishing immediately and giving way to a lively acidity. Final without slightly bitter persistence.

Pairing: Ideal with dried figs or with an artisan panettone and can be dared with sweet and sour fish preparations or with a very fresh tuna tataki.
