History and Winemaking
The Aleatico grapes, trained with the spurred cordon system, are harvested and manually selected in wooden boxes in the **second half of September**, after having undergone a slight drying on the vine. Fermentation occurs with maceration on the skins in temperature-controlled steel vats. The wine then matures exclusively **in the bottle** before being released onto the market.
Organoleptic Profile

Nose: **Persistent, sumptuous, and pervasive** aromas of **ripe figs, raisins, cloves, and candied orange**.
Palate: **Very warm** (16 degrees), with hints of **fruit preserved in alcohol (black cherry, cherry), cinnamon, and amaretto**. The sweetness is very slight and vanishes immediately, giving way to a **lively acidity**. The finish lacks persistence and is slightly bitter.
