Le Pitre Salice Salentino DOC from the Mottura winery is a wine produced from grapes produced in the Salice Salentino area, on clayey-based calcareous soils in the central part of Salento. It is a wine of great complexity and with a solid and full-bodied structure. It is a wine of undoubted personality, with typical characteristics that deeply link it to the territory in which it is born, exalting and rewarding the maturity of the Negroamaro. The training system is the traditional Apulian sapling, with a yield of 80 qt. per hectare.

The harvest is manual with a selection of the best bunches that have reached the right ripeness, when the sugar and polyphenolic component is at its maximum. In the cellar the grapes undergo a long maceration of 20 days with the use of delastage and pumping over. The wine concludes its production cycle with a malolactic fermentation carried out in French oak barriques.

The nose is intense, sweet and with hints of red fruit jam, blackberry and sour cherry which give it a strong identity. Spicy tones of black pepper and cocoa. In the mouth the tannins are soft and go in the direction of sweetness and harmony. The varietal notes dominate and overall prepare for a long finish of great persistence

Pairings: It goes perfectly with roasted game and medium-aged cheeses.
