LIANTE Salice Salentino DOC of Castello Monaci winery is a red wine made from Negroamaro and Black Malvasia grapes of Lecce grown in the Salice Salentino countryside.
The name LIANTE, means “Vento di Levante”, icy winter wind and hot summer that blows strongly on most of the Adriatic regions and in particular in Puglia.
The grapes come from vines cultivated with Apulian sapling and spurred cordon on deep and dry limestone-clay-siliceous soils. The average yield is 90 quintals of grapes per hectare. The grapes are harvested by hand and, due to their different ripening times, vinified separately. First, the Negroamaro which matures after the first ten days of September and then the Black Malvasia. The harvest takes place only in the very early hours of the morning.
The vinification takes place in temperature-controlled stainless steel vats with 10-12 days of maceration and daily pumping over. After malolactic fermentation and assembly, part of the wine aged in French barriques, while the rest is aged in steel.
LIANTE Salice Salentino DOC has a deep ruby red color. The aroma is intense and complex, with hints of marasca cherry jam, dried plum, chocolate and vanilla. The flavor is vigorous, warm and harmonious, with an elegant base of very ripe fruit and spices, with a balsamic finish and a pleasant hint of bitter almond.
