LIANTE Salice Salentino DOC – Castello Monaci: LIANTE (named after the “Levante Wind”) is a Puglian red wine made from **Negroamaro (80%)** and **Malvasia Nera (20%)**. After a long maceration period, part of the wine matures in **French oak barriques**, giving it an intense and complex aroma of **morello cherry jam, chocolate, and vanilla**. On the palate, it is **vigorous, warm, and harmonious**, finishing with a pleasant balsamic note and a hint of bitter almond.

Winemaking and Aging Details

The grapes (Negroamaro and Malvasia Nera) come from vineyards cultivated using the **Apulian ‘alberello’ (bush) and ‘cordone speronato’ (spurred cordon) systems** on deep calcareous-clay-siliceous soils. Harvesting is manual and separated by grape variety. Vinification takes place in stainless steel tanks with **10-12 days of maceration**. After malolactic fermentation, part of the wine matures in **French barriques**, while the rest is refined in stainless steel.
