MAMAA ‘Spumante Brut Salento IGP is an extraordinary wine born with the idea of producing in Salento, a land where rosé and red wines are the masters, a sparkling wine that exploits the characteristics of one of the native Salento vines most suited to bubbles the Verdeca. This particular wine is produced by Apollonio Vini, a company with more than 150 years of activity on its shoulders that operates in Monteroni in the heart of Salento.
The grapes that give life to this white Salento sparkling wine are produced in the area that goes from Monteroni to Copertino, a Salento area with a great winemaking vocation. The vineyards are located 100 meters above sea level and are cultivated on calcareous soils mixed with clay, with the espalier technique. The plants are about 30 years old and the planting density is about 5000 plants per hectare with a final yield of about 80 quintals per hectare.
The harvest is carried out manually in the first week of September, and after the manual harvest of the grapes the classic de-stemming is carried out, followed by soft pressing to preserve the fruity and floral taste. This is followed by about three weeks of slow fermentation at low temperatures. Second fermentation directly in autoclave without stopping on the lees and cold bottling.
MAMAA ‘Spumante Brut Salento IGP is presented in the glass with a lively, fine and persistent perlage. The color is pale straw yellow with greenish reflections. The nose is fruity and floral with hints of green apple, white flowers and elderberry. In the mouth a fruity and citrus flavor prevails with elegant aromatic notes, a marked minerality and flavor.
Pairing: Raw seafood, shellfish, fried fish, fresh cheeses.
