Mamanera the Negroamaro Rosso IGP Salento by Tenute Perrone is produced using a selection of the best Negroamaro grapes produced in the countryside of Campi Salentina in the vineyards owned by the company. The grapes are harvested in the first week of October and after being harvested by hand they are de-stemmed and crushed and then kept in contact with the skins for 6/7 days at a controlled temperature. Subsequently it continues with a pressing and alcoholic fermentation always at a controlled temperature and finally the wine is left to rest in steel before being bottled. Mamanera is a wine with an intense purple red color, with hints of ripe fruit, red flowers and spices and it leaves a strong persistence typical of Negroamaro in the mouth. Mamanera is a structured red, ideal for first courses and second courses of meat.
