NEGROAMARO IGP Salento MASSERIA FANO is an extraordinary product a wine produced for the first time in 2020 with the 2018 hervast and run of only 2000 numbered bottles and is obtained in a territory, that of the Salve countryside, which has always been suited to viticulture. A territory that overlooks the sea and as in the case of the Masseria del Fano vineyard which is located a few kilometers from the sea in a rather windy area, where the frequent north winds allow to maintain a dry climate and at the same time help to mitigate the rather high summer temperatures typical of the Salento summers. The rows are oriented from North to South and the altitude of the vineyard is about 68 m s.l.m. The typology of the land is rich in skeleton. The training system used for the production of Negroamaro grapes is a spurred cordon with a production of 40 quintals per hectare. The average age of the vines is 6 years and the yield of grapes in wine is around 60%.
The harvest is carried out in the first decade of October and when the grapes have almost reached maturity, in one of the two plots that make up the vineyard, the peduncle is throttled to favor a partial dehydration of the grapes. Overall, this operation raises about 30% of the production. After about 15 days the grapes are harvested and vinified together.
Vinification begins with the crushed and de-stemmed grapes which are subsequently inoculated with selected yeasts and fermented with maceration. The fermentation of the must takes place at a controlled temperature of 24-26 ° C and lasts about 10 days. During fermentation, frequent pumping over and delestage are carried out. The malolactic fermentation is completely carried out and finally the wine finishes its maturation with an aging of 6 months in French oak barriques.
NEGROAMARO PGI Salento MASSERIA FANO 2018 presents itself in the glass with a ruby red color. The nose is characterized by notes of ripe red fruit accompanied by hints of licorice, coffee and chocolate. The tasting is enveloping, with an important but not aggressive structure. Balanced and elegant.
Pairing: Wine to accompany with savory dishes based on beef. Roasted and boiled, but which can also be combined very well with grilled pork or sauce.
